Most cookie policies are long because most websites carry a lot of trackers. Ours is short because this site sets three cookies. Two are Google Analytics, which only run if you accept them. One remembers your answer so the banner stops asking. There are no advertising cookies and nothing that follows you to other websites.
01What a cookie is
A cookie is a small text file a website asks your browser to keep. It lets a site recognise the same browser between page loads, which is how a booking form remembers what you typed on the previous step, or how a consent banner knows not to reappear on every page.
Cookies cannot read files on your device or run programs. They hold short pieces of text, usually a random identifier.
02The cookies we set

Starting a booking may set a short-lived session cookie so the form remembers your answers between steps. It expires when you close your browser or shortly after, and it is strictly necessary: without it the booking form cannot work.
03The categories
The site cannot function without these. They remember your cookie choice and keep the booking form working across steps. They set no identifier that is useful to anyone else, and they cannot be switched off.
Google Analytics, which tells us which pages people read, which they leave quickly, and roughly which city visitors are in. We use it to decide what to write next. Decline it and the site works exactly the same.
Those are the only two categories in use. If we ever add a third, the banner will ask you before anything is set.
04What we do not use
No advertising or retargeting pixels. No social media tracking pixels. No cross-site profiling, no data brokers, and no cookies that follow you to other websites after you leave. We are not running ad campaigns against your browsing history.
We link to Instagram from our site, but that is an ordinary link. Nothing is embedded here that reports back to a social network while you browse.
05Google Fonts
Our typeface loads from Google Fonts. This does not set a cookie, but it does mean your browser requests a file from Google's servers, and in doing so Google receives your IP address. We mention it because it is a transfer of data to a third party even though no cookie is involved, and most policies quietly leave it out.
06Changing your choice
You can change your cookie preferences at any time using the consent link in the footer of this site. Declining analytics stops the Google Analytics cookies from being set on future visits.
If you have already accepted and want to reverse it, decline in the banner and then clear cookies for this site in your browser. That removes the identifiers already stored.
07Blocking cookies in your browser
Every major browser lets you block or delete cookies in its settings, usually under Privacy or Site Settings. You can block third party cookies entirely, delete everything for one site, or browse in a private window that discards cookies when you close it.
Blocking strictly necessary cookies may stop the booking form working. If that happens, call us on (917) 699-2975 and we will take the booking the old-fashioned way.
08Changes to this policy
If we add or remove a cookie, we will update the table above and the date at the top. Where a new cookie needs your consent, the banner will ask before it is set.
